Abstract

Study was made of sterols (4,4-dimethyl-, 4-monomethyl-, and 4-desmethylsterols) in the bran of rice (Oryza sativa L., cv. Koshihikari). Three 4,4-dimethylsterols, seven 4-monomethylsterols and fourteen 4-desmethylsterols were detected by GC-MS and sterol compn. in each case was detd. Ten minor sterols, 31-norcyloartenol, 24-methyl-23 E-dehydrolophenol, 24-ethyl-23E-dehydrolophenol, 24-methylenecholesterol, campestanol, ホ・2-stigmastenol, episterol, 24-methyllathosterol, 24-ethylcholesta-5, 25-dien-3ホイ-ol and sitostanol were identified for the first time in the rice bran.
