Abstract
Tea is a brewed drink that comes from dried fresh tea leaves. Fresh tea leaves, which are the raw material, grow at various altitudes. It is necessary to know, the effect of the height at which the tea leaves grow on the quality of the tea leaves for further processing. This research aims to determine the effect of the height at which the tea leaves grow on water content, ash content, total phenols, and antioxidant activity. The experimental design used in this research was a Completely Randomized Design (CRD) with 1 factor, namely the difference in height of growing tea leaves. This study used 3 treatment levels, namely 700, 900, and 1800 meters above sea level, with 4 repetitions. The results of the study showed that the height of the growing area had no significant effect on the water content, and ash content of tea leaves. The height of the growing area has a significant effect on the total phenols, and antioxidant activity of tea leaves. Tea leaves grown at an altitude of 700 meters above sea level have the highest total phenols, namely 49.17 mg GAE/g and antioxidant activity of 35.74 ppm, which indicates strong antioxidant activity.
