Abstract

The inactivation of nisin by pancreatic and other proteolytic digestive enzymes has been investigated. No inactivation was obtained with preparations of crystalline trypsin, elastase, or carboxypeptidase A, nor with commercial preparations of pepsin or erepsin. Both pancreatin and α-chymotrypsin inactivated nisin, and evidence is presented to show that the nisin-inactivating component of pancreatin is α-chymotrypsin. Commercial preparations of trypsin which also contain chymotryptic activity caused limited inactivation of nisin. © 1969, American Dairy Science Association. All rights reserved.
