Abstract

Banana stems are often considered as waste with no economic benefit, but they have many nutrients that are good for health, such as aiding the digestive system, controlling cholesterol, and lowering blood pressure. In addition, if not managed properly, this waste also causes environmental problems. The purpose of this Student Creativity Program (PKM-K) is to transform banana stem waste into a healthy and high-value innovative product, KEBAPIS. It is expected that this product can improve the economy, especially for MSMEs, as well as become an alternative to healthy food. The PKM-K implementation method is input, process, output, and evaluation. The process starts with production training, product development, and then marketing. The evaluation stage is carried out to ensure product quality and assess effective marketing strategies. The conclusion of this PKM-K activity is that through this innovation, KEBAPIS has succeeded in turning banana stem waste into products that consumers are interested in. This program has a positive impact on waste management, supports the economy of MSMEs, and creates healthy food alternatives. KEBAPIS is a sustainable solution to support food security and local development.
