Abstract

Mycotoxins are toxic secondary metabolites of fungi (molds) that attack crop plants. Not all fungi that infect food produce toxins. However, some fungi (colonizing grains of corn or other cereals, peanuts and nuts, e.g., almonds and pistachios), produce mycotoxins that have an extremely harmful effect on human and animal health.
